I'm sure that when the idea was brought up on the stoves list I read that the 
technique was self regulating depending on the tilt of the rotor and the lip 
at the end. Maybe a search on sweet making would yield an answer.

I think you may find that you only need 30% fine dust  as long as the other 
sizes don't separate from the mixture, check out aggregate theory in plaster 
and rendering.
