The lime plater in question would be tadelakt, a traditional lime
plastering technique used mostly in Morocco, although it is becoming
more common in parts of Europe, and is used to some extent in North
America now.
The exact technical details of this material have slipped my mind, but
it seems to be very, even extremely, durable.
Here are some links for you.
Here is the Wikipedia link for tadelakt.

The Tierrafino Company in the Netherlands is a well known supplier of
the ingredients for this type of finish:

The Budwell company in New York specializes in earthen materials,
including tadelakt--there are lots of exciting photos here.

Tadelakt workshops in Provence, France:

Yeah, I know...it's a long way to travel for a 2-day workshop...but the
food should be fantastic...:-)
I believe at least two listmembers have hands-on experience using
tadelakt, so they might offer some comments.
Cheers,
Chris Green.
