I'd echo Seth's post.  The people who care about Venetian plaster and can
pay for it (or your other lime based sustainable paint products and such)
are not at the low end of the "food chain."  They are folks with plenty of
discretionary income who can afford to pay for their sustainability.  You
are on the right track getting hooked up with the architect.  You also need
to make connections to Interior Designers.  Often people will pay much more
for remodel work than for new construction, and most of this market - at
least at the level where something other than the cheapest paint is used -
is served by interior designers who are happy to have a cadre of good
sub-contractors to execute their vision for the client...
