[Greenbuilding] linseed oil finish causing freckles?

Jim, the door shown in your second photo,  at

looks like the birch equivalent to ribbon striped mahogany. This effect 
is quite uncommon, and I've never before seen it so pronounced in birch.

So you can just label it 'ribbon striped birch' and skip the 
refinishing.  :-)
