Excellent advice, thanks very much to all.

I have a bit of experience with electricity and will likely do as much 
of the electrical work myself as the county will allow,.  However, I am 
willing to concede my own stupidity when it comes to plumbing.  The 
advice about pressure-testing and liabilities is spot-on.  I'll still do 
as much as I can, but under the watchful auspices of a well-paid 
plumber.  :)
