Airlie,
I'm not in Austin, but I made a trip there about a year ago and was
looking for the same sort of thing. The Ladybird Johnson Wildflower
Center would be one stop I would recommend. There are some absolutely
gorgeous rainwater catchment systems to see there. Great bookstore
there, too.
There is an "eco-store" very near downtown: Eco-wise, 110 W. Elizabeth
St., Austin, TX 78704. It's near the intersection of Elizabeth &
Congress & you'll see other interesting shops up & down Congress near
there. Small building, but lots of neat stuff packed into it.

Here's a place you'll want to see: http://rhizomecollective.org/ -- I
missed it while I was there, but a friend later went & said it was nice
to see what they're doing there.
There is an "Austin Sustainable Building Coalition" that holds regular
meetings and events--check with them to see what will be going on while
you're there: http://www.greenbuilder.com/sbc/ Also, check their
"Members Websites" links--more interesting spots listed there, including
other email lists you might want to ask. In particular, Gail Borst
might be able to put you in touch with someone who could show you their
naturally-built home: 512-478-9033
I know there are some native plant nurseries between Austin &
Fredericksburg (and probably lots of other places), but I don't have any
specific suggestions.
Hope this helps,
Leslie / Oklahoma
