Maybe he meant you could choose a green color.
The only possible thing I see as concession toward green, is the double
pane, lo-e windows. Why exactly you need such windows in an _unheated_
garage escapes me, you would be better off with single pane windows.
I would say strawbale was also overkill for an unheated garage however.
If a carport (i.e. roof but no walls) isn't sufficient for you, how
about earth bag walls.
And covering over your existing top soil with the dirt from the hole,
will ruin it.
Sadly, this is how a lot of buildings are done in this country. I
would tell the contractor that he apparently didn't hear you, and try
to find one who will. It doesn't sound that this guy is worth a second
try, but you are closer and can make that judgment
better.
You can do this, don't get discouraged.
