regarding dishwashers, I have to hand it to my new faucet aerator. This may
strike some as fanciful, but I recently swapped my 2 gpm for a 0.5 gpm model
and am thrilled. The spray pattern works for me and as I wash under running
water it's a good match. I do the evenings dishes for the three of us using
just about 2 gallons of water.

for fridges, see recent discussion on energy star and its limitations.
Avanti and other small top-freezer models are worth looking into. 320 kWh/yr
is doable. Be persistent.
