For the heat shield, the simplest/cheapest method I know is to go to the
lumberyard and get a sheet of tile backer board, which looks (and
essentially is) a thin sheet of firberglass reinforced concrete.  Mount
it on spacers about 1" away from the wall.  Very effective, fireproof
and not too ugly if you paint it.  If you still don't like the look, you
can always tile it.  

Don't put tile or masonry directly on the wall, it conducts heat pretty
well.  Engineer some kind of spacer in there. 

If you are 36" or greater from a sheetrock wall, you don't need a heat
shield.  

Make sure there is a fireproof surface under the stove for 36" in all
directions.  This can be as simple as a square of concrete stepping
stones from the hardware store or as elaborate as you like.

Don't know about the exercise bike.  Humans produce a pitiful amount of
wattage, and water pumping uses a famously large amount of energy to
move much water around.  I think the gal on the bike may drink more
water than she pumps!

I have a friend who has purchased a new (Amish) kitchen cook stove and
would
like to find some type of reflective heat shield to put between the
stove
and the wall.  She is concerned that an aluminum or galvanized heat
shield
with absorb & radiate heat to the wall behind.  Anyone know of such a
product?  She's also looking for a way to set up an exercise bike to run
a
pump to pump water from the pond up to the garden.  Ideas?  Thanks
