Blazemaster PVC (and maybe a competitor by now) have obtained UL Listing
for their fire suppression system using PVC. A homemade PEX system (or
chewing gum, or regular copper water pipe) is not UL listed as a fire
suppression system.
In a commercial job, where a fire suppression system is required, the
AHJ would climb right down your throat if you installed a non-UL listed
system. It would be a clear code violation. In a residence, since the
sprinkler is not required, I can't see how the inspector could quarrel
with you. Although you never know, they can beef about almost
anything.
PEX is great stuff, IMHO.
