I am running about 100% excess air (EA) because it is hard to build a fixed 
stove with something lower.  Getting the EA down to 250% I view as a 
prerequisite and then down to 100% when the fire is really going well (15 Kw 
on a Lion Stove).

I found that the CO/CO2 ratio is best when it is running hottest and 100% EA 
is achieved.  Choking it further makes more problems.

It is likely that a grate will boost performance by reducing the amount of 
char left at the end.  I see real problems getting materials that will last. 
Perhaps there is a ceramic answer.
