A couple of years ago I was looking at variable speed fans. From my research, my general conclusion is that a single stage fan that is made to run very efficiently at a specific speed is much more efficient than a fan that is made to run at different speeds.
From that, I looked at ways to adjust the speed of the fan. The easiest (and maybe Paul showed this to me) is to just move the fan closer or farther from the stove.
Having the fan connected to a stove can cause many issues, not least of which is burning up the fan. I had a 4 can gasifier going full blast cooking fish in oil. Not much smoke or anything. The fan was bolted to the stove. I dumped the hot ashes from the stove, turned it upside down, and the fan melted off.... now I just sit the fan next to the stove. The problem with this is that the air pressure varies more than it should on different ports on the stove, varying burn rate. I've looked at deflecting the direct air, but have no fast solutions, other than to add a air base like Paul does.
