Thanks for that.  The correlation is visually obvious when you plot it. 
Fires are so variable I am happy even to have something this good.  It looks 
like we need to tighten up the air flow in the stove to cut the air supply 
by 80% or so when simmering.

That will then give another set of readings with other correlations!
