This can easily be modelled because the thermal mass of ceramic can be 
determined, the K value (heat conduction constant) measured, the emissivity 
of the ceramic surface on both sides measured and its performance predicted.

The same for metal.

It is not possible to say in advance what the better performer will be 
because it would be comparing two unknowns and claiming one is always 
better.
