I've only swapped these around in cars, is the output linear? Do you
just connect a 12V supply to the wire and then read the resistance? Is
the second wire a reference for temperature?

I'm told you can make something much cheaper by using an ordinary bulb
with the glass gently broken off but the electronics defeat me.
