Crispin,

We are an investor in a state of the art fish dryer and I just got back word
that they spend 2.2 kWh/kg of dried fish. They start with roughly 4.55 kg
of fish at 85% moisture to end up with one kg at 15% moisture.

I would assume this is as efficient as it gets. They use the waste heat
from a refrigerator compressor for the heating and then use the resulting
refrigerant to condense the moisture out of the air and recirculate the air.
Once an hour they scrub the air with a caustic down wash for a few minutes.
The result is an odorless system -- ok it still stinks, but only in the
building. The neighbors don't complain.

Jim
