[Stoves] Boiling

I perceive confusion between evaporation and boiling.
Any liquid in an open container evaporates if its vapour pressure is 
higher than the partial pressure of its vapour in the surrounding 
atmosphere.
In my book a liquid boils if it produces vapour at a pressure equal to 
that of the surrounding atmosphere. Also the observer can see bubbles 
forming at the hottest spot in the container. These bubbles rise to the 
surface without collapsing on the way.
Water in an open container will evaporate at any temperature if the 
partial vapour pressure in the surrounding atmosphere is lover, be it at 
9 C or at 90 C. The rate of evaporation will be higher at the higher 
temperature.

I agree with Kevin's views on the WBT but will not reproduce his 
comments to save space.
