i've found a moisture meter to be about as useful as a combustion
meter. i ended up buying the high end delmhorst one, but mostly
because i wanted all their add on sensors probes. i am as interested
in measurements on granular and straw material as solid blocks, which
is more difficult than wood blocks.
as for what the inductives will do, here is a summary i wrote on the
gasification list some months ago. it has links to places where the
differences are explained and models offered. basically, the
www.delmhorst.com site has very good orienting explanation of the
different types, as well as corrections for different materials and
species, as well as temp.

with a little poking around, one is immediately faced with the choice
between the resistive type with pins you need to insert into the
material. and inductive types you just put on the surface and measure
differences in EM reflectivity. a good explanation of the two types,
and pros and cons is here:

there has been enough confusion and/or desire acceleration that

there are cheap knock offs of these 2 in 1 pin and scan models now

note the inclusion of correction tables for variations in density and
