[Strawbale] gypsum interior plaster over earth plaster

Hello straw balers,
  I'm about to plaster with gypsum on the interior of my bale house, over an earthen plaster scratch coat.
   
  Shall I use the (gypsum) product straight for both brown and finish coats? Would I need to add sand for any reason? (I don't particularly want a sand finish).
