[Strawbale] Construction of the KOC Sustainable Living Centre

Very cool building! I'm always interested in seeing all the different natural construction methods.. Our own cob/cordwood home utilizes several of the same green building techniques. (http://home-n-stead.com/about/blog.html) It's also exciting to see natural building taking place in more northern climates.

I was intrigued by the cob countertop. We will be building our kitchen counters soon, and have been looking for a cheap, green alternative to conventional countertops. Any advice in this department as far as the mix goes? I would think that an earthen floor type mix might be too soft, but perhaps we could have some built-in recessed wooden cutting boards to take the brunt of the abuse or something...
