As for countertops, there are several catalogs I get for commercial
material handling, and they sell lab benches.  You can either buy the
bench frame and top together, or buy them separtely.  That means that you
can buy a maple butcher block top 30" wide by 72" long for about $250.
Makes a very good countertop, and given that it is glued together with
wood glue and then varnished, it should be quite eco-friendly.  Heck of a
lot cheaper than any of the man-made materials like Corian.

Although I don't know if it will fit in your budget, when you say
shoe-string.
