Linda's idea is interesting - may be more appropriate for a bath than
kitchen, though. Awfully hard on good knives to cut on glass. Butcher
block is usually available from ReStores and other recyclers, and can be
easily cut down to make a customized insert in concrete or whatever your
counter surface is. End cuts of redwood, set on end and laminated, make a
pretty decent counter surface as well. A theatre in Berkeley has such a
floor which has been in for couple decades. I thought it would show more
wear than the little it has, and it's beautiful and water-resistant as well.
