Andrew,

There is an article in the most recent TLS about siding over bale 
walls.  You can find as much info as you need on the subject by googling 
"rain screen." 

By placing siding over bale walls you are cladding them with a far 
superior finish over plaster, for you climate.  Read up on rain screens 
and their role as a finish system.  I think you are on the right track!
