You're assuming, though, that you pack the water in as densely
as possible. I'm guessing that for day-to-day temperature moderation
you'd need a lot less than the theoretical maximum volume. So only
put in every third bottle in your mental diagram, and you're within
the design load.

Yes of course. Many variables at play, including spans, volume of storage
desired, and convection patterns.
It's notable too that the closer to bearing a load is placed, the less
strain it imposes on the beam (in this case, attic floor joists). So if the
convection source is at the edges, and storage is offset accordingly, the
problem can be mitigated.
